The model SAI-M01 is a small Santoku knife. The knife is easy to handle and ideally suited for all-round use. The blade length of this model is 13.5cm. The knife consists of a total of 3 layers. The two outer layers are a slightly softer stainless steel alloy called SUS 410. These layers are intended to protect the hard Cromova 18 Sanso core with a hardness of 59 degrees Rockwell and make it resistant to external influences. The handle of the knife is ergonomically shaped and is characterized by the special grip position for the thumb. The thumb rests gently at the transition between handle and blade and therefore ensures a loose and relaxed grip. As has been proven for many years with the classic Global knives, the handle of the Sai series is also filled with fine sand to perfectly balance the knife and ensure balanced work. The seven dots on the handle stand for the seven virtues of the samurai and are intended to honor their centuries-long tradition of knife smithing. Another design feature that ensures liveliness and modernity is the hammer blow optics, which are applied to the knife by hand. This not only gives for a beautiful look, but also has a practical use, which is comparable to a Kullenschliff in other chef's knives.
